Generally no. The only time we used to was at our home resort of Maui Hill. They used to have a weekly "Mai Tai" party out by the pool. Provided free Mai Tais (both with alcohol and without), Maui potato chips and had drawing for freebies. The other time(s) we've done resort activities was at the Bay Club on the Big Island when they used to have their kid's club activities. Our dds participated in a few.
Most of the time the scheduled activities interfere with our daily plans.
At River Pointe, we did the orientation meeting which told us about some events that they did, and we did one of the three wine tastings that they had set up. That has been about it. Nope, come to think of it, we did an orientation meeting in Big Sky MT too. Among other things, we were told not to get close to the buffalo and of couse, we saw lot of people getting close to the buffalo. Other than those examples, not so much.
Many resorts offer some activities (either free or for a fee) at the resort.

We own at the infamous Pelican Resort in SXM, and there are loads of resort activities we participate in:
Orientation -- love these when we take folk with us. They can decide what they want to do, and not always depend on my likes/dislikes.
Sunset boat cruise (we call it the booze cruise). folks from all over the island/other resorts try to sign up for it, so we are not always lucky enough to book.) I mainly try to book this when we take folk with us.
Bingo is free -- and the prizes are generous. (I even go to the games @ Flamingo, next door). Bingo is also held at Pelican's onsite casino, but I do not attend here.
water aerobics -- this has become a morning hangout for all owners
island bus tours -- a couple are free --great when you take folk with you, and you want them to get acquainted with the island (and you do not like to drive, now that SXM has become a tourist mecca/so congested)
-- beach tour
-- p'burg shopping
-- marigot shopping
-- island orientation
manager's party nite -- mucho vendors from around the island set up to sell their crafts. Snacks/hors'd/drinks are served.
Movie nite -- free, first-run movies shown on Wednesdays. Popcorn is also provided.
How broadly are you defining resort activities? We usually do the paddle boat and canoe and mini golf sort of things, but rarely make the scheduled stuff. Middle daughter always wants to do the ones involving food but I can't remember if she's ever managed to. She's the only social one of us.
No, don't typically participate. Did bottle painting once when on a girl's trip. Shoot, almost forgot that we did karaoke, too. those darned gal pals.
Glad I'm not the only one that thinks the food-related ones are of most interest. Make your own sundae or welcome breakfasts, those appeal to me. Or, you know, HAPPY HOUR!!
We try to go to the welcome and orientation meetings. Also participated in the Water Aerobics at Orange Lake and Landmark. Played some bingo few times too.
I guess I try to do some if I can work it into my schedule.
I've done:
Dancing hula at the pool in Old key West for a prize. (didn't win).
Did ceramics painting in Royal Sands in Cancun and also their free taco lunch at the pool.
At Ft. Laud beach resort, I've done the happy hour lots of times $1 Pina coladas and pizza.
At Vacation village Berkshires I took the beading class and now I'm hooked on beading.
I always try to do the orientations of the area if I am new to the area.
Did the wine & chees mixer at Custom House.
Have done the free barbeque at St. Aug world golf village on 4th of July with fireworks.
And have done lots of free coffee and doughnuts on the mondays.
Of course I sometimes take the "tour" for the gift cards.
I'm planning on doing the tour of Jiko when I stay at Animal Kingdom.
So yeah, I do try to do the activities. Afterall we are paying for them so why shouldn't we take advantage and do something different.

As for the beading....I am intrigued....what about the activity got you now hooked on that? Is it jewelry only or clothing and other items that you do?
Yes, the get acquainted coffees are fun to do, to get oriented to what is available.
I am more curious about the types of resort activities that the resort makes available, like these that you have put in your list.
Scheduled things, like "on Monday at 3 we have an ice cream social" or "Wed at 6 join us for the barbecue."
Our experience has been that these type of activities do not have sales folks around, it is just to create an atmosphere of fun.....but in some resorts, the morning coffee often had sales crews seeking fresh meat.
