It's only a 1-1/2 to 2 hours drive one way to the Falls from P & P, so why stay at the falls ? P & P is nice, but there's not much more than the Panama Rocks nearby. You might also do the lakefront in Erie or the wineries, but a day or 2 at the falls is a good idea. Best winery is Merit.

Niagara on the Lake is a nice drive from Niagara Falls. It's not that far. It is a small town with cobblestone streets and little shops. See a link here. There are a lot of wineries on the way there.

The Indian Casino at Salamanca, NY is a short drive East on on I 86.
The Restaurant is very good, The weekend Buffet is great. You could go to Ellicottville neat small town near another ski hill. Drive the countryside an stop at many of the Amish shops for bake goods or Quilts. Jamestown is close but is a disappointing city but if you Love Lucy they have the Lucille Ball museum there.
May is to early for the Chautauqua Institution but a drive around Chatauqua Lake is pretty.
