I am wondering if chains like Wyndham let you book for one night. we have arranged one week in orlando checking out on Jan 24 with my daughter and her family, they will need Jan 25 for early flight on Allegiant (only flies once a week). it might be a difficult night to get, but if it can be booked, is anyone interested in renting something out?

Bluegreen has a two night minimum. However you can book Bluegreen on the Choice Hotel site....and I do not know if there is a minimum.
Marriott.com lets you book one night.
Sometimes checking directly with the resort would allow you to book additional nights.

I think my daughter will take care of her hotel, she booked next to Orlando airport instead of near Sanford airport. and now has to redo the reservation.
but now I have to find her a car, flying into sanford on jan 11, needs to drive to Fort Myers area that day, can return car, that evening, but needs it again on Jan 17 til Jan 25 and it must fit 3 adults and three children in car seats. and I have to somehow survive this clan for two weeks, and Disney too. age 6 weeks, 3 and 5.

Are they coming with you to the Golden Corral?
Yes Wyndham can be booked for 1 night but as Scootr5 said you gotta still pay the
housekeeping fees and guest fee so most wouldn't be interested in doing a 1 night
rental for that reason unless it's a VIP with free GC and HK fees.
You can do it thru RCI points too and may or may not be charged the HK fees.
I've had them waived or forgotten at Wyndham before.
DVC allows 1 night ressies without any extra fees.
I'm doing a 1 night to go to the GC to meet you so hopefully you can come.

Sanford's the worst destination for that. Rentals cars are much higher than the main airport. Sometimes Clearwater would be tough, too, while Tampa was not.
That's one of the things that's simplified now.
But, then, if you go get all those things for her, I hear they're free.

FWIW: The likelihood of a one-way rental being inexpensive is not very good.
Why not find the best car rental location, say Ft. I do vaguely remember from skimming things that are said here that you are expecting visitors. Now I'm just basically confused, not following exactly how many you need lodging for or when you a rental car for.
But that's normal.
