I managed to pull a 2 BR for President's week 2008 this morning with a good week in II (although I haven't had much luck finding anything for me in II). It is only a couple of hours from home and the kids have been asking to try the snowboarding/skiing thing.

Is it too brutally cold to be there in February? Will I be stuck in my unit?

Even if you were to get stuck at the resort your still going to have a great time there. The resort has a Movie theater, Bowling ally, game room . indoor pool,indoor tennis and basketball and so on.
