So I'm officially 2 months away from my 1st ever trip to the Big Apple. Are there any must see/dos? Is there anything that I need to start booking now as opposed to later? I'll be staying at the HGVC West 57th. Anyone want to meet up?

So glad you'll be headed our way!! Let me know your dates - who is coming in terms of ages/interests?
If you want to see popular musical, you should get on that now. I highly recommend Pippin. Kinky Boots is a huge hit, but I haven't seen it yet. Book of Mormon is probably still too hard to get two months out but worth checking.
Check out Sleep No More and Then She Fell - experiential theatre - read up before deciding if it's for you.

I'm told boat tours are the best for seeing some of the main attractions like Statue, etc.

I think you'll enjoy "Beautiful" the Carole King musical.
A bike ride thru Central Park on a nice -not too hot - day.
Hilton W 57th has a nice outdoor rooftop patio, but you may need to be an owner now to enjoy it. No worries, there are several nice rooftop bars with views, something special in NY at night.
The museum of TV and radio in Rock Center is fun - maybe you can get tickets to a live TV show while you're in town.
