    Try this - French Toast Recipe


    ENLIGHTENED FRENCH TOAST


    1 cup skim milk
    1 container (1/2 cup) cholesterol free egg substitute
    1 Tbsp. firmly packed brown sugar
    1/2 tsp. vanilla extract
    1/4 tsp. ground cinnamon
    6 Tbsp. I Can't Believe It's Not Butter! ® with Calcium Spread or Light
    12 slices cinnamon bread or cinnamon raisin bread
    1/2 cup seedless raspberry jam


    In medium bowl,
    with wire whisk, beat milk, egg substitute,
    sugar, vanilla and cinnamon; set aside.

    In 12-inch nonstick skillet, melt 1 tablespoon I Can't Believe It's Not Butter! with Calcium Spread over medium heat. Meanwhile, dip 3 slices bread into milk mixture. Add to skillet
    and cook 5 minutes or until golden brown, turning once. Repeat with remaining bread.

    Meanwhile, in small saucepan, melt remaining 2 tablespoons Spread with jam until smooth. Serve with French Toast.

      Another Favorite


      OVEN-BAKED FRENCH TOAST


      12 slices cinnamon bread or cinnamon raisin bread
      1 pint (16 oz.) half and half or light cream
      2 large eggs
      6 Tbsp. I Can't Believe It's Not Butter! ® Spread, melted
      2 Tbsp. firmly packed brown sugar
      2 tsp. vanilla extract
      1 tsp. grated orange peel (optional)
      1/4 tsp. ground cinnamon
      1/8 tsp. ground nutmeg (optional)


      Preheat oven to 350°.

      In lightly greased 13 x 9-inch baking pan, arrange bread slices in two layers.

      In large bowl, with wire whisk, blend remaining ingredients. Evenly pour over bread slices, pressing bread down until some liquid is absorbed and bread does not float. Bake 45 minutes or until center reaches 160° and bread is golden brown. Serve hot and sprinkle, if desired, with confectioners sugar.


      *SUGGESTION:
      Freeze leftover French toast in airtight container. To reheat, let come to
      room temperature, then arrange on baking sheet and bake at 350° until hot.

        Wait a minute. What planet are these people on? If I'm using an entire pint of cream and two large eggs, then I'm using REAL BUTTER!

          I had to open the door to let the dog out. He was in and out in under 30 secs and came in drenched. It is real bad out there, Definitely not Cigar smoking weather.

              We had a wonderful soaking rain all day yesterday. My tomato and squash plants and mesclun seeds are all gonna take off like beanstalks! Today it's windy and the leafy green trees are swaying in the wind. What a wonderful, lovely planet. Life is good.

                It's raining like crazy, and my yard too, is staring to look like a lake. I'm so glad that the landscaper just did the spring clean-up, on Thursday. The place is gonna be a mess, when this is all over.

                It seems the only thing that today is good for is eating.

                We had delicious French Toast for Breakfast, per Wacky's inspiration. And, I have a pot of sauce on, with Prosciutto filled Braciole. I'm already starting to think about what I can make for snacking on tonight.

                  I set up some rye bread in the bread machine, and I took a duck out of the freezer and put it in a pot of cold water to start defrosting. Seems like a good night to eat winter food.

                    How are all you right coasters doin'?

                    Our snow in California fizzled out, turned to cold rain & has moved on. Today is a typical sunny spring day. Sweatshirt weather but bright & sunny. Everthing is bursting with green. Hope you are all warm & dry inside & nobody is getting flooded. We are all going to sure appreciate summer after this long cold winter!
