neat card trick

He has the deck stacked at the start in a specific order. Notice that it's a six of spades that he has on the bottom of the deck at the start. The six of spades is also marked in some way so that he can find it easily - thick stock or some such.
When he does the shuffle, he does a controlled riffle (takes practice to do that) so he still has maintained the order of the cards. Same thing through the part where he cuts the deck. In fact, after he's finished the shuffle he fans the deck and checks the stack to see where he needs to cut the deck to put it back in the proper order.
Then when he passes the deck to each person to cut, he misaligns the stack where he wants the cut to be. (Almost always when someone cuts a deck they will cut it at the misalignment.) So he still has control of the deck.
Jane, the first person, misses the cut though. If you notice she leaves few extra cards on the bottom half of the deck. So as he reforms the deck after her cut he repairs her cut. You see starting at 2:31 when he puts his left hand over Jane's top cards; look carefully and you'll see that when he brings her bottom half over with his right hand he actually slides her bottom half back under her top half. I can't tell if he totally undoes her cut, or if he just fixes the few cards that are off. I think he undoes the whole cut because, as explained below, he does a final cut of the deck which could be the replacement for this failed cut.
The other two cuts appear to be what he wants and he lets them stand.
After he gets the deck back from the last person, look carefully starting at 2:40. You'll notice that he cuts the the deck in his hand and the six of spades is showing at the bottom of the deck. Because the six of spades is marked, he knows where to cut the deck. (If he totally undid Jane's cut initially all he's doing here is restore that missing cut.) He also peeks at his cut of the deck to verify that he's got the six of spades on the bottom.
He's now got the deck set up and he proceeds with his story.“Maybe you shouldn't dress like that.”
“This is a blouse and skirt. I don't know what you're talking about.”
“You shouldn't wear that body.”

And as for card games - in suited games I have a hard time just counting trump, let alone remember what cards have been played. In poker I can't assess and reassess odds as quickly as needed for my own hand, let alone other players hands and make reads as well.

If you cut a deck precisely in half and do a perfect riffle (a perfect riffle is one where the cards from each half interlace perfectly - no doubles) four times, the original order of the deck is restored. So when you see a skilled card magician shuffle a deck four times, that's a dead giveaway that the deck is back in the start order and hasn't really been shuffled at all.“Maybe you shouldn't dress like that.”
