I just sold several items to one person on Ebay. She lives close enough to me that we plan on meeting and omitting the shipping fees. The items have ended with a shipping fee. Does anyone know how I can change the end price? I can't figure it out. I want to remove shipping fees and if possible, give her an overall discount on her items without Ebay taking a cut for the discounted amount.

Do you need to change the Ebay invoice? If not, and If she paid through PayPal, you could just send her the amount you want to pay through their "Send Money" option.
I'm not sure if you want to change the whole invoice and get back from eBay some of their cut they took out already. -
You can do a partial refund thru paypal. Paypal will give you a refund of their commission but ebay won't automatically give you a refund of the shipping commission. I'm not sure how you'd go about getting ebay to give you that refund. Probably have to call them if you can find a phone number.
BTW, ebays seller protection requires you to have a tracking number. I'm not sure how much money is involved here but you might want to mail her, her invoice with tracking just in case she undoes the transaction. There are so many scam buyers on ebay these days. I've had a few this month.
