  • Eating meat = smoking cigarettes

    Okay, I guess after the world health organization reports that eating processed meat is like smoking, I am probably a 2 pack a day eater. Ham is my primary sandwich meat. I do a lot of my cooking over charcoal and often add wood pieces to add more smoke and flavor. Sometimes I have meat on the Big Green Egg setup as a smoker for 4-10 hours.

    In the picture, I have taken a ham on the bone, trimmed the outer skin, fat and old smoke layer. I then smeared on mustard and a dry rub of brown sugar, cayenne and chipotle peppers, black pepper, salt, paprika and a couple other items. That rested for a few hours before it went into the smoker with chunks of apple wood for smoke. I basted it a couple times and in 2 hours, outstanding.

    Oh, forgot my 2 cigars a year, opening of the patio season and closing of the patio season.

    Yup, I guess if I am asked if I smoke, I am a 2 pack a day smoker.

      One of the primary causes of cancer is aging. If we would just go back to the days when the average life expectancy was 65, cancer rates would plummet.

      As would deaths due to coronary disease, Alzheimers, diabetes complications, pulmonary function, and many diseases related to internal organ failures.

            My 90 year old Auntie eats a ham and cheese sandwich pretty much every day and has for the last 50 years, so I think you are pretty safe Vinter.

              In case anyone is in a panic, the cancer danger from eating red or processed meats is nowhere near that danger with smoking cigarettes.

                I think it would only be the weak minded people who would be in a panic. Media tends to emphasize the parts of a study they think will get the most attention. The media has an agenda.......sell advertising. In todays world, views drive advertising dollars. Drama is more important than fact or substance.

                I stopped listening to cancer scares news articles when the big news flash was that grilled hamburgers caused cancer. It was at that point I began to realize that life itself caused wear and tear on the body.......which in turn left the body vunerable to infections and disease. We can live as healthy as possible but time continues to take it's toll on the body regardless of what we say, do or believe. Moderation in everything is usually the best strategy. Excess in anything, even drinking water (look up water intoxication. It's a real thing) can kill you.

                    I have made some good meat sticks. I grind the meat, add seasonings and spices, fill the casings and smoke them. Great to take along on driving trips.
                    I have some jerky meat in the freezer, really need to process that soon.
                    Bought 2 bags of lump charcoal yesterday. Turkey will be done on the grill plus an upcoming meal of stuffed salmon. Mmm.

                        That happens all too often in science these days, as science pronouncements are sculpted to fit predetermined positions.

                          We made smoked chicken apple sausage for no particular reason. They turned out great. My smoked salmon is one of my favorite smoked salmons, anywhere. It so good. I have to hide it.
