I like brining and then smoking the bird.
Brining adds moisture and flavors (what ever you add to the brine gets pulled into the bird) and smoking is slow cooking which also helps to keep the bird from drying out.
We are going to friends today who are going to use the webber kettle grill method of cooking. I think the DW said it was a 23lb bird, and a dozen people to eat it.
This is my favorite holiday. Two days off of work, and wonderful foods to eat.

Actual turkey story.
We used to tailgate with a group of friends to Chiefs games. We always cooked two meals, depending on whether it was an early game or late game. We brought enclosed canopies and heaters, and we'all shared the cooking.
My BIL and SIL would come every now and then. They are Ozark Americans and one time they cooked breakfast . . . wild turkey, biscuits an gravy. That became a favorite meal.
One year they had wild turkey breakfast duty, but they and theirs did not shoot a turkey. So, they went to the store and bought one. The oohs and ahhs were just as big as ever.
Those of us in the know just sat and laughed, then my SA BIL just had to say, "Be careful.
