  • about organic milk?

I had grown tired of throwing out half used containers of 1% milk every week. A friend tipped me off on organic milk. The expirations are ~6 weeks from purchase date in most cases. I decided to give it a try.

I have had a half gallon in my fridge for over 3 weeks. Open and in use. Poured it over cereal yesterday and perfectly fine.

How do they DO that? Why does the regular stuff expire in a week-10days and this organic milk lasts forever? It kind of weirds me out in a way.

Even though more expensive it costs far less than tossing away the typical stuff.

Organic milk is usually given a ultra high temperature (UHT) treatment, meaning it is heated to 275 degrees for a couple of seconds. This kills all the bacteria in the milk, allowing it to have a longer shelf life than normal pasteurized milk which doesn't eradicate all bacteria. UHT also has a shorter processing time, which reduces the spoiling of nutrients found in the milk.

UHT milk also doesn't need to be refrigerated (a weird concept to us Americans, I know), so UK dairy farmers want to make 90% of milk UHT treated to cut down on greenhouse gasses (this is still being discussed).

      So it is organic Parmalat?

I'm sorry but it goes in the fridge no matter what they say. Although I always used to keep a carton of Parmalat in the house, in the cupboard, just in case.

      Thank you Emmy.

I don't like the taste of UHT milk--I find it tastes artificial. The little containers of half-and-half that you get at restaurants are also UHT, and I think they have a slightly plasticy taste. They're better than artificial creamers like Cremora, but not as good as plain old milk.

There's organic milk that is UHT and organic milk that is not UHT. The non-UHT organic milk tastes really good. I use it sometimes to make ice milk in the summer b/c it tastes richer and creamier than whole non-organic milk.
