    I have made shrimp scampi many times. However, I want to make it on Christmas as one of my entrees. I am trying to figure out how to do this. I will be making 6 pounds. Any suggestions on how to cook it? I was thinking of putting it in 2 jelly roll pans. But, should I cook in a hot oven, or under the broiler? If I do it under the broiler, I can only do 1 at a time. Then, I would want to serve it in something nicer looking. So, should I just broil shrimp, and then add crumbs to the top? Then I was also thinking of putting them on skewers and cooking on the grill outside and then tossing with flavored breadcrumbs, butter and garlic. Any suggestions would help. Thanks.

    I would do it in a large, deep pan on the stove, in batches. I make it by browning the garlic in olive oil and butter, then adding the shrimp and covering the pan so they steam themselves. When they're done (and it goes fast), if you want the broiler-bread crumbs version, put it in an au gratin kind of dish with the chopped parsley and bread crumbs (and parmesan? Sometimes people put parmesan on it) and just run it under the broiler while you're doing the next batch in the pan on the stove. You'll need a few gratin pans. But you could serve in them, with lots of small dishes of scampi.

      Need good recipe

      I'd like to see a recipe for scampi. I have one pound of shrimp and want to cook it for my wife & guests. Do you use white wine, butter, lemon juice & garlic? Put in under the broiler for a couple minutes?
