      Went out for supper. Home safe and sound. Surf a little on the internet. Wait for the New Year to come in and kiss my husband. Tomorrow - black eyed peas for lunch with my mom.....

        Well as predicted - DH is in bed ....
        and I am watching a very funny SNL 90's show drinking a cosmopolitan.....
        Last New Years Eve I was in Aruba.......AHHHHHHHHH

          We're watching a Korean soap opera (I know, it's strange, this is our new addiction) from the library and we're thinking about opening a bottle of wine. DH is grading papers and I'm so happy b/c the last, the very last, the last of the last of DD's college applications went off this afternoon. Yay! We have friends over for New Year's Day every year, so we have to get up early and go get bagels and doughnuts. Happy New Year, everyone!

            I am feeling good. Me and my BIL had some fine wine and some great Cigars while the wives made HOme made ham Calzones and fried pizza along with the best home made rice ballls that I ever had.

                  Went to Saratoga Springs 1st nite celebration. Lots of good bands at various venues around thre town. We do a 2hour volunteer manning one of the venues and the other 4 hours we go and see some of the bands that we like. We had the last shift this year 10:00 to midnight but went to venue at 9:00 to cover for a friend. Fireworks at midnight and now home. Had a good nite and now like Tony I am getting ready for next storm tomorrow and some more snowblowing!! Happy New Year everyone!!!

                          Rice balls are a very popular Italian dish. They are delicious, and can be made using recipes, but here's one recipe......


                          ITALIAN RICE BALLS (ARANCINI)

                          1 lb. white rice
                          4 eggs
                          1/2 c. grated Parmesan cheese
                          1 lb. Mozzarella cheese, cut in 16 cubes
                          1/4 lb. Genoa salami, cut in sm. pieces (or, Suppresotta, Prosciutto)
                          1 1/2 c. Italian bread crumbs
                          Olive oil
                          Spaghetti sauce with meat (meat sauce)

                          Cook rice until sticky. Let cool. Mix rice, 4 egg yolks and grated cheese in large bowl. Form rice mixture into balls (the size or oranges) enclosing cube of Mozzarella and 2 or 3 pieces of salami, prosciutto, or supersatta inside each rice ball. Beat egg whites. Dip each rice ball in beaten egg whites and then in bread crumbs. Drizzle with olive oil and broil on all sides until well browned. To serve, split open and top with meat sauce. Makes 14 to 16.

                            I would not use just any white rice. I would use aborrio rice.

                                mmmm good, is right.

                                However, I have learned over the years that most people can't deal with Arborio rice. That alone would be enough to prevent them from trying the recipe.
