  • Vanilla ice cream

    I have a big, old-fashioned ice cream maker (the kind that uses ice and salt), and we want to make vanilla ice cream. Does anyone have a good, reliable, not-killingly-rich recipe?

    We like Breyer's ice cream better than Haagen-Dazs; we're looking for that lighter ice-milk kind of texture, not the eggy-custardy ultra-smooth ice cream.

      Yeah, where's Mike now that I need him?

      That recipe looks good, Lawren! I might substitute a cup or two of cream to make it richer, but I'm liking it. The kids love snow ice cream anyhow, but god only knows what they're ingesting when we make it. Thanks!

          Probably yes. I do a lot of cooking, but I totally draw the line at the salt-rising bread. I mean, I'm sure it's delicious, but....

            Don't have a recipe for you, but I agree that Breyers is better than Haagen-Dazs, especially vanilla.

            With Breyers, it's all in the bean. You can even see the little specks of vanilla bean in the ice cream. I think it's their vanilla bean that sets them apart.

              I like the Breyer's texture. It's a little bit icy...perfect for root-beer floats! They recently changed the recipe, though, and added something called tara gum. Now the texture is kind of fakey-smooth, more like Edy's or Turkey Hill. I don't like it as much as the "old" Breyers, but it's still pretty good.

                Looks like we have ice cream tasters just like wine tasters! I like ice cream as long as it is cold and creamy! My weight shows it too!

                  Never fear, I am here. OK, here's very simple very good ice cream receipe. No cooking. Watch out, don't turn it into butter.

                  Ashton Villa Vanilla Ice Cream

                  A former winner at the Fourth of July Ice Cream Crank Off when it was held at Ashton Villa Mansion in Galveston, Texas.

                  4 c light cream or heavy whipping cream
                  3/4 c sugar
                  1 1/4 tsp vanilla extract
                  Pinch of salt
                  Red, White & Blueberry Topping (recipe follows)

                  Blend cream with sugar, stirring constantly 4 to 5 minutes. Add vanilla and salt, stir again. Pour into ice cream maker packed with ice and rock salt according to manufacturer's directions; process until thick. Repack with fresh ice and rock salt. Let stand 2 to 3 hours to ripe. Use Whipping cread for a richer ice cream.

                  Red, White and Blueberry Topping

                  1 tbs cornstarch
                  1/3 c orange juice
                  1 10 oz package frozen sliced strawberries
                  1 tsp vanilla
                  Marshmallow creme
                  Fresh or frozen blueberries

                  Combine cornstarch and juice in small saucepan. Cook over low heat, stirring constantly, until sauce thickens. Continue cooking 3 minutes. Add strawberries and stir until thawed. Add vanilla. Let cool 15 minutes. Refrigerate covered until serving time. Makes 1 1/2 cups.

                  To serve: Spoon marshmallow creme over ice cream; add a spoon of strawberry sauce and top with blueberries.

                        Hey, can I move in with you guys?

                        With Lawren doing all the main courses, Mike doing all the deserts, and the laundry being sent out, I'd be in heaven.

                        Hey, I'm willing to throw in a pot of sauce, and some meatballs, every now, and again, if it will clinch the deal.
