    Ashton Villa Vanilla Ice Cream

    A former winner at the Fourth of July Ice Cream Crank Off when it was held at Ashton Villa Mansion in Galveston, Texas.

    4 c light cream or heavy whipping cream
    3/4 c sugar
    1 1/4 tsp vanilla extract
    Pinch of salt
    Red, White & Blueberry Topping (recipe follows)

    Blend cream with sugar, stirring constantly 4 to 5 minutes. Add vanilla and salt, stir again. Pour into ice cream maker packed with ice and rock salt according to manufacturer's directions; process until thick. Repack with fresh ice and rock salt. Let stand 2 to 3 hours to ripe. Use Whipping cread for a richer ice cream.

    Red, White and Blueberry Topping

    1 tbs cornstarch
    1/3 c orange juice
    1 10 oz package frozen sliced strawberries
    1 tsp vanilla
    Marshmallow creme
    Fresh or frozen blueberries

    Combine cornstarch and juice in small saucepan. Cook over low heat, stirring constantly, until sauce thickens. Continue cooking 3 minutes. Add strawberries and stir until thawed. Add vanilla. Let cool 15 minutes. Refrigerate covered until serving time. Makes 1 1/2 cups.

    To serve: Spoon marshmallow creme over ice cream; add a spoon of strawberry sauce and top with blueberries.
    Mike, I was so amused by Angela gasping for breath that I forgot to thank you. The ice cream recipe looks great...the topping I'm not so sure about. Marshmallow creme? Seems like it would give perfectly good frozen berries a weird taste. Should I not doubt you? Or, wait, it looks like the marshmallow creme is optional. Okay, I'm opting out. Thanks again!

      Mike's recipe and Lawren's recipe are actually very very similar. Lawren's uses milk where Mike's uses cream, and Mike's uses less sugar and less vanilla. I'm going to try a blend of milk and cream, the lower amount of sugar, and the higher amount of vanilla.

      What would happen if I threw a couple of eggs in there? Too weird?

        Not that anyone asked but...I only eat vanilla ice cream if it is under Creme de Menthe, chocolate or caramel sauce, or some other additive to make the vanilla non boring. Now for chocolate..

          The recipe I posted is meant to be made without eggs. Don't know how it will be with eggs.

            We made the ice cream and it was FANTASTIC!

            I used...

            4 cups organic whole milk (I think this has the best, richest flavor)
            4 cups half and half (store brand, I already spent a bundle on the organic milk)
            1 1/2 cups sugar
            1 tablespoon vanilla

            Yuuummmm! It all worked the way it was supposed to, can you believe that? The only difficult part was gathering enough ice--we had a party a few weeks ago and still had a seven-pound bag plus about two pounds from another bag, and it took all that PLUS every ice cube we had in the house in ice-cube trays, including the ten cute tiny duck-shaped ones in the silicone mold. Plus a container of salt. (We don't have an ice maker.)

            The texture was more snow ice cream/Breyers than Haagen Dazs. We're all so excited (and sugared up. Middle DD is lying on the floor in an ice-cream-induced coma. )

            Now we want to make ice cream EVERY DAY!!!! Got any recipes? Bring 'em on!
