  • Turkey Meatloaf recipe

I meant to post this recipe a while back:

Turkey Meatloaf (recipe courtesy of katiemack)

1 pound ground turkey (dark meat is more flavorful)
    1 egg, slightly beaten
1/4 c bread crumbs, finely ground, unseasoned preferably
2 garlic cloves, minced or grated
    zest of one small lemon
grated fresh turmeric, about 1/4 to 1/2 tsp (fresh turmeric is lighter and delicate in flavor....so if you use powdered, adjust accordingly)
    1/3 cup milk
1 to 1 1/2 tbsp homemade chicken/turkey gravy or store bought gravy
    1 Tbsp dijon mustard
    salt and pepper for seasoning
1 to 1 1/2 tsp of canola oil, and some extra canola oil to grease the loaf pan, a glass one is best.

Grease small loaf pan with some canola oil.

Mix all ingredients, well. Place into loaf pan,
cook until done, about 35 to 45 minutes in 350 degree oven. Makes 4 servings.

Serve with gravy, sweet potato and a veggie. Enjoy!

I am known for my meatloaf but it is not nearly as healthy as yours ( mine is oldfashioned southern. )
    Mix together

    Good ground beef
    season all
    egg & a little milk
    onions/green pepper & celery
    couple shakes of worchestire (sp)
Mix together quaker oats & Italian bread crumbs
    ketchup
mix altogether , put in pan bake @350 between 45 & 60 mins

    Yummy shaggy

My wife mixes 1/2 ground turkey, 1/2 turkey sausage in her meatloaf. It adds a nice flavor, and can be used to modify pretty much any meatloaf recipe.

Thanks, shaggy....your recipe sounds tasty....sometimes I make a modified version of my turkey meatloaf with green onions and some celery...I think I will try your recipe with ground beef just for a change.

This recipe is very moist....and if you let it sit for a couple of minutes before you slice it, all the juices are absorbed into the meat....just like when you let a steak rest before slicing it.

I bet that sausage flavors the meatloaf...I will have to add that as a variation to try! Thanks!
