  • Lawren's Summer Pasta Salad

    A few people I recently served this to enjoyed it and wanted the recipe. Although not inexpensive this one is easy-peasy to whip up. I prefer it warm or room temp but it does well chilled too.

    Summer Pasta Salad

    1LB Box of Bowtie (Farafelle) Pasta
    1/2 cup olive oil
    2TSP Salt
    2TSP Pepper
    1LB Brie chopped into 1inch pieces with rind removed
    One Bunch fresh basil leaves Sliced into 1/4 inch strips
    approx 4 medium ripe tomatoes diced

    Boil water and add Bowties cook approx 11 minutes. Drain and put back in pot on low heat. Add olive oil, salt, pepper and brie. Stir until brie is melted. Add basil and tomatoes. Stir until well mixed.

        MMmmmmm...brie.

        Lawren, did you know there's a fantastic store for cheese in Englewood? I remember you go there sometimes. The brie there is inexpensive enough to make this a very reasonably priced treat!

          I often add chucks of hard cheese to pasta salad - never thought of brie. That sounds wonderful. Around here, you can get brie flavored with herbs. I can't wait to try this. Thanks for posting the recipe!
