Anyone have any ideas for what to do with a bumper crop of summer (yellow) squash? Preferrably something that the kids will like.

Winning receipe & my modifications
Last night I wante to try Trisha Yearwood's squash casserole but I screwed up so I changed it and it came out great. I'll give you both.
Trisha's
2 lbs yellow summer squash trimmed & sliced 1/4 inc thinck
1/2 small sweet onion , peeled & diced
1 tsp salt 1/4 tsp pepper
1 lg egg
1/2 cup mayonnaise
1/2 cup grated Cheddar Cheese
1/2 cup butter crackers such as Ritz crushed (about 12 crackers )
Preheat oven to 350. Butter a 2 qt casserole
Place sliced squash & onion in a medium sausepan w about 1 cup of water & 1/2 tsp salt Cover & cook about 15 min. Drain & cool
Put squash in a bowl & beat with electric mixer , should remain chunky. add egg, may, cheese, remaining other 1/2 tsp salt & the pepper & mix until combined.Pour squash mixture in the prepared dish , top with crumbs , bake for 30 mins. Yummy
My version: same ingredients & methods (sort of) I had already put it in the oven when I discovered I forgot the cheese.
Spray. the casserole dish. Cook squash apx 15 mins. I used both yellow summer squash & zuccini . Add salt & pepper to taste. ` Chop up the squash & onions ( I used one of those little bowls with a blade in it and turned the arm a couple of times) If I had been smart I would have added the cheese at that point also. Throw into the prepared bowl. Take same chopper & add equal amts of may & sour cream & egg . Turn crank, comes out real creamy. Mix into squash . I used Pepperidge Farm baked cheese crackers & chopped/crushed them up and added some bread crumbs & sprinkle on top. Cook uncovered about 30 mins. Enjoy. shaggy

I just do it Southern style but without the bacon grease. I use 1 tablespoon of olive oil. Slice it, add a small onion, chopped, 1/4 water, and salt/pepper. Salt is to taste/pepper is about 1/4 teaspoon. Bring to a slight boil, reduce heat, and cover. To be honest, it takes 2-3 hours to cook. You just keep checking until everything is the consistency you like.
Even my Yankee husband says it's the best squash he's ever had. I use the yellow crookneck type.
