I thought I had lost this one forever but it turned up when I moved! Used tilapia last night and cut back the cook time a bit.
Broiled Sea Bass with Pineapple-Chili Glaze
Servings 4
Ingredients
4 Chilean Sea Bass Fillets
3/4 TSP Salt
1/4 TSP Black Pepper
4 TBSP Pineapple Preserves
3 TBSP Rice Vinegar
3 TBSP Chopped Fresh Basil Leaves
1/2 TSP Crushed Red Pepper Flakes
2 Garlic Cloves minced
Directions
1.Preheat broiler
2.Combine preserves, vinegar, basil, red pepper, garlic and 1/4 TSP salt in a small bowl.
3.Spray broiler pan with cooking spray and place fillets in pan. Sprinkle with remaining salt and black pepper.
4.Broil 5 minutes.
5.Remove fillets from oven and spoon on glaze.
6.Return to oven and broil fo an additional 5 minutes or until fish flakes easily with a fork.
