  • I made Bacon Jam today

    Well, I made the bacon jam today. I only did 2/3 of a recipe since I had a 4 qt. slow cooker and it called for a 6 qt. Next time I will do the whole amount, because I found that it would have been fine as long as I stirred once in a while.

    And I gotta tell you, it is Luscious!

    Fern, what do you eat it with? It can't be sweet like toast with butter and jelly or marmalade.

      It is somewhat sweet, because it has syrup and brown sugar in the jam (as well as cider vinegar and coffee). I had it on baguette, but you could put some in an omlette, a quesadilla, in a cream cheese and bacon jelly sandwich, on a hot biscuit, etc.

        It sounds like an interesting recipe. I just looked at the website. I wonder why the coffee? For the rest, it sounds great.

          I don't know why the coffee, but you don't really taste it at all. I think it might be to absorb some of the sweetness. You might be able to substitute Mexican chocolate (made with the tablets...Abuela, etc.) instead.

            Coffee is used to add depth more than flavor. It's like the pinch of salt, or the 1/4 tsp of vanilla. Not a lot (some, yes, but not a lot) of flavor on their own, but they bring out the flavors in other items.

              I made chocolates and strawberry cake , which is very delicious and fantastic.. I like sweet dishes very much...

                  How long can you keep it in fridge? How many cups does it make? It sounds delicious.

                    It msakes maybe a cup and a half or so. Keeps at least three weeks. I really like it on french bread toast.

                      Does it affect your blood pressure? I haven't tasted bacon for about 3 yrs and I really miss my fav summer sandwich...blt with raw cucumber and raw onion on ww toast. I have resistant hypertension and just got my BP down to acceptable levels and am scared to death to eat anything high in sodium.
