I do a pumpkin bread and a pumpkin soup which are yummy. I substitute a butternut squash for the pumpkin as it is easier and they are very close relatives.
cut in half. scoop out seeds and goopy stuff, coat fleshy areas with vegtable oil and bake, cut sides down, on an aluminum foil covered cookie sheet in a pre-heated 350 degree oven for about an hour or until tender.
Let cool and scoop out flesh. Use as exact substitue for pumpkin in recipes.Lawren
