  • Tomorrow Nights Dinner....

    So i've been trying to teach myself how to cook over the last couple weeks....My hours changed at work and now i get home at 4pm and am ready to start cooking....So far it's just been Shake and Bake chicken legs, Basic Shrimp Scampi over Spaghetti, Crab legs and Steamed Clams, Garlic Bread with roasted Garlic and Butter & a failed attempt at Chicken Cutlets Stovetop fried in Clarified butter....The Easy Stuff

    So i figure, its time to move on and start challenging myself....I'm hoping this thread turns into a list of Recipes and suggestions for the next night....

    So Tomorrow I'm planning on making this...

    Chili's Spicy Garlic & Lime Shrimp

    Ingredients:
    Servings: 4 Units: US | Metric
    2 tablespoons butter
    1 clove garlic, pressed
    24 fresh large shrimp, peeled (about 1 pound)
    1 lime

    Seasoning
    3/4 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 teaspoon cayenne pepper
    1/4 teaspoon dried parsley flakes
    1/4 teaspoon garlic powder
    1/4 teaspoon paprika
    1/8 teaspoon dried thyme
    1/8 teaspoon onion powder Directions:

    1 Make the seasoning blend by combining all the spices in a small bowl. 2 Preheat a large skillet over medium heat. 3 Add butter to the pan. 4 When the butter is melted, stir in the pressed garlic. 5 Immediately, add the shrimp to the pan. 6 Cut the lime in half and squeeze each half into the pan over the shrimp. 7 Sprinkle the entire seasoning blend over the shrimp, and give it all a good stir. 8 Saute the shrimp for 5 to 8 minutes or until they begin to brown. 9 Be sure to cook both sides of all the shrimp.

      I'm planning on Beef Chow Mein over fried rice---but it is much too early to say for sure. If the weather stays dry, I might break out the cauldron and make some boiled pizza.

          I tend to be a pretty boring cook in the summer. Protein (usually marinated in a McCormicks and grilled) with a salad is the daily dinner around here. I did pick up a bag of frozen tilapia yesterday though and will probably make this in the next day or so:

          Broiled Sea Bass with Pineapple-Chili Glaze

          4 Chillean Sea Bass Fillets ( or other mild white fleshed fish)
          4 TBSP pineapple preserves ( Polaner All Fruit or other )
          3 TBSP rice vinegar
          1 TSP fresh basil, minced
          1/4 TSP crushed red pepper
          1 garlic clove, minced
          3/4 TSP salt, divided
          1/4 TSP black pepper

          Preheat Boiler.
          Combine preserves, vinegar, basil, red pepper, garlic and 1/4 TSP salt into small bowl.
          Spray broiler pan with cooking spray and place fillets in pan. Sprinkle fillets with 1/2 TSP salt and black pepper.
          Broil 5 minutes.
          Remove from broiler and brush fillets with glaze.
          Return to oven and broil for an additional 5 minutes.

          This is also a nice light and very easy meal:

          Salmon with Dijon & Dill Sauce

          1 (2 - 3 pound) salmon fillet 1.5 inches thick
          3 TBSP extra virgin olive oit
          Coarse kosher salt
          Freshly ground black pepper
          1/2 cup Mayonnaise
          1/2 cup sour cream or plain greek yogurt
          3 TBSP minced fresh parsley leaves
          2 TBSP Dijon mustard
          2 TBSP minced fresh dillweed
          2 TSP freshly squeezed lemon juice

          In a small bowl mix mayo, sour cream or yogurt, parsley, dill, lemon juice, cover bowl and refrigerate for at least 3 hours.

          For oven: Line the bottom of an ungreased broiling pan with aluminum foil and spray broiler rack with vegetable oil cooking spray.
          For grill: Spray cooking grid with vegetable oil spray BEFORE LIGHTING!

          Preheat oven or grill to 350 degrees.

          Wash the salmon and pat dry. Rub well with olive oil, sprinkle with coarse salt and pepper. Place skin side down on to rack or grill.

          Close grill or bake in oven for 8 to 12 mins or until meat thermometer reads 140F. Let sit for a few minutes then serve with dijon sauce.

          At parties I just put this out on a platter and let people self-serve. ETA Halve the recipe for home dinners. I use leftovers for lunch with salad.

          I second Allrecipes.com. Just plug in your main ingredients and you'll get tons of suggestions with helpful reviews. I have enjoyed ~95% of the recipes I have used from that site.

              So an update....I thought it was really good! I didn't have any Parsley or Onion Powder, but still i liked it...There was more 'juices' then i expected...so i reheated some rice and poured the shrimp and the extra juice over rice....and i think that was the only failure with this meal....The reheated rice ended up just being Mush...Watery, Flavorless Mush

              I added a 'splash' of water to the rice before i microwaved the rice...But maybe i used too much


              Any tips on how to reheat rice?

                Tomorrow Nights Dinner:

                This is much more simple

                The main goal of this meal is learning how to cut and fry my own Potato Chips...But with those Chips i'm going to Saute some onions and Bubba Burgers

                I was originally going to try to stuffed the burgers with Sauted Onions and Mushrooms, but after looking in the fridge AND looking at the burgers, i realized i don't have any Mushrooms and i can't figure out how to stuff pre-cut Burgers

                I don't have a 'mandolin' or sharp knifes so cutting the Potato's for chips is going to be a challenge, but i'm VERY excited about trying...i purchased some peanut oil last week so i can experience the flavor...i hope potato chips oven fry well in Peanut oil

                  Break the rice apart and spread out on a plate. Place a DAMP paper towel over it, letting it contact the rice. Mocrowave on high a minute or so. Viola.

                      Changed tonight's dinner due to time constraints and the realization that I had some corn ready to pick. Nothing like good sweet corn on the cob less than an hour off the stalk.

                        I bet. The freshest I've ever gotten is from the local farm stand and it is fabulous.

                          Oh! any suggestions on Corn? I've got some about to go bad in the fridge...I've seen people put butter under the 'skin' wrap in the Foil and throw it on the BBQ...But i'm not sure if thats the way to go...

                          I've never had corn that Didn't come from the Supermarket BTW
