My Stop & Shop sells pre-made sweet potato patties/cakes that are quite reasonably priced. 6 or 8 for $1.99, depending on size.
I'm going to coat them with graham cracker crumbs, back them in a 350 degree oven for 30 minutes, or so, on a cookie sheet.
Take them out of oven and coat with an easily made caramel sauce.....(Caramel Sauce can also be purchased pre-made at supermarket) Top them each with a marshmallow and put them back into the oven until the sauce is warmed, and the marshmallow browns.....Serve on a decorative tray with dinner.
Easy Caramel Sauce
Ingredients
1 packed cup brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch salt
1 tablespoon vanilla extract
Directions
Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.
