    SWEET HAWAIIAN CROCK-POT CHICKEN--EASY AND YUMMMY!!


    2 lb. Chicken tenderloin chunks

    1 cup pineapple juice

    1/2 cup brown sugar

    1/3 cup soy sauce


    Combine all together, cook on low in Crock-pot 6-8 hours...


    that's it! Done!


    Serve with brown rice and you have a complete, easy


    meal!!

    I like to use cut-up boneless/skinless thighs instead of breasts. I also add chunks of bell pepper and pineapple to cook only slightly the last hour before serving.

      Guess what I got cooking. I did add some love from Jamaica to it so it has a slight kick.

            I goofed somewhere cause mine did not look like what was pictured I did about 6 pounds of wings and added to much liquids which kind of changed things. The wings where almost boiling for 4 hours so I removed them and put them. I then toasted them in the oven. I then took the juice and put it in a sauce pan added more brown sugar and some extra love and made it gooey. Pored it over the wings and yum yum. They came right off the bone. BTW I also made Siracha Buffalo wings that were great as well. This meal was perfect for watching the Rangers beat the Flyers in the playoffs.

                So glad you like it.
                I'm holding off this year.

                Basically eating BEANS and GREENS. Lots of SALAD.

                Dropped from 285 in January to 257.9 today.

                I'm aiming for 185. That's 100 pounds less for these legs and heart to carry. I'm 1/4 of the way there.

                      I thought the same, then I remembered Apricot Chicken . You might be too young to remember 1970's Australian recipes but it involved chicken baked with a can of "Apricot Nectar" and a good handful of dried apricots. Apricot Nectar was a can of about 35% apricot juice and the rest was sugar and water, the handful of dried fruit probably translated to more than a dozen apricots. It was a very sticky sweet dish.

                        Ahh yes. I love apricot chicken but I make it without sugar. Usually have it at the snow each year because it's easy in the show cooker.
