    Of course I made it even better, This is what I did and we Loved it, I changed a few things. I used 2/3 cup of white flour and 1/2 of wheat flour, 3 eggs, a 1/2 teaspoon of Vanilla extract and for the kicker about 1 oz of Cream Cheese cut in small cubes and placed on top so it just sinks a little. After it cooked for 30-35 minutes I put a few drops of lemon powdered sugar and home made strawberry preserves. WOW was it great

    We call those "German Pancakes" (also seen them called Dutch Baby or Dutch puff); I was confused for a minute because our baked pancakes are just regular pancakes cooked in jelly roll pans.

    We usually fill German pancakes with some kind of fruit, but your variation sounds excellent. When strawberries are in season, most years I make strawberry crepes with a cream cheese/whipped cream filling; your recipe reminds me of that.

    One of my favorite fillings for German pancakes is peaches or pears (canned or not), drizzled with caramel or butterscotch sauce (home made or ice cream topping). I warm the filling in the microwave while the pancake is baking.
