  • My Hawaiian Sweetpotato Casserole

    If y'all want a simple, different sweet potato dish try this. Mash either cooked or canned sweet potatoes, add a can of either crushed or tidbits pineapple (whatever you have on hand) shredded coconut, brown sugar, mix together. Add pecans mixed w brown sugar on top and bake at 350 until hot & bubbly.

    Not exactly diet food, but it is yummy!! shaggy

      I love sweet potatoes. Been having sweet potatoes cravings since the baby was born but they're $4.99/kg at the moment in the supermarkets/regular shops. DH got some at the farmers market for me at $2.99/kg. Still not that great a price though.

      How much are they in the U.S.?

          We have always done sweet potatoes, pineapple, brown sugar, cinnamin, & butter all mashed together then topped with marshmallows and baked.

          My family makes me make them for thanksgiving and easter.

          I'll have to try the coconut & pecans - that sounds good too!

            I like my sweet potatoes just baked in the oven whole. Had 2 small ones for dessert last night. Yummo. I find them sweet enough and don't like food that are too sweet.

              One of my step-dad's gfriends made sweet potatoes with marshmallows in them. YUK!

              Shaggy your's sounds much better. Gluttony is the menu of the day, so long as we watch out between now and x-mas.
