I can't get enough of this salad, so I must pass it along since there is that option here. It's absolutely my favorite thing to eat anymore.

Costco sells 2lb bags of cooked tail-off shrimp. That's perfect if you want a week supply to take for lunch with you.
Thus:
2 lbs shrimp
1 bunch of celery
1/2 a red onion
either fresh or dried dill.
white wine vinegar
cracked salt and pepper
mayonaise
I've found that white wine vinegar is better for marinating the flavors together rather than white wine which some others have recommended. And I've found it's best to keep the mayo separate until you're going to eat. After a day, the mayo gets runny, and that's no good.
It's really easy to assemble. Just chuck the shrimp in a bowl with chopped celery and more finely chopped red onion. I've also enjoyed adding some fresh chopped chives. If using fresh dill add that, or sprinkle in the dried stuff. Crack in the sea salt and black pepper, and then sprinkle about a tablespoon or two of the white wine vinegar on top and toss it all together. Add the mayo when you want lunch and it's heaven.
Oh, lately, I've been added bacon that I've cooked and crumbled. That's a nice addition.
