  • Fertillies?

    OK kids,
    I've posted this question on numerous cooking/recipe websites with no response. I lived/was stationed in southern Italy in 1968,69. I was at San Vito dei Nommani Air Station a few miles out of Brindisi...on the heel of the boot. We worked 24/7 shifts and during our 4 to midnight shifts we would take orders and send someone to go get "fertillies". I don't know about the spelling but basically they were like a cream puff or pocket I guess, stuffed with mozerella cheese, a stewed tomato like substance, meat/sausage and really not too much for spices. But, we loved them. Can any of you Italians shed any light on this dish.

    Edited to add: It wasn't friarelli, was it? or The famous fiori di zucca (zucchini flowers) are stuffed with mozzarella and anchovies before being dipped in batter for frying.

      there is a southern italian dish, that I would think you could stuff with anything. It's called frittelle, (fritter) I imagine if you make them big enough, you could put anything in them. We used to make little Sfingi (another name) when we were kids and eat them with some honey on top, but they were the size of marbles. Same principle though. Do a search and see what you come up with.

      Katiemack is right..it does sound just like a calzone, but maybe it was fried (I bake mine) and they called them fritters ( Frittelles, in Italian)

        Oh, I've searched this for years to no avail. The fritter thing though seems to have some merit. I'm aware of calzones but this was more of a "cream puff" than a pocket or calzone. It could nearly sit on it's end. Looked more like a jug than a fat,long, roll.

            I think what you mean is Prefertiles (sp) There cream puffs with chocolate on the outside.

              the fritters are made with ricotta, which should make them fairly light. I'll see if i can find a recipe for them

                I used to make them, I have a receipe I will look also but If I recall it is just Ricotta, Floor, Sugar , water

                  I think they are called St. Joseph's Cream Puffs, or something, like that.

                  They are made with Ricotta Cheese.

                    Yup BF, they were like a cream puff pastry but stuffed with cheese, sausage, and tomato etc. instead of sweets.
