My family loves this recipe. It's very quick and simple. Use just blueberries <there's a great sale on them at our local Shoprite this week > or mix various fresh berries. You can bake a homemade 9 inch one shell pie crust or really cheat and use on of the ready made Keebler Elve's graham cracker crusts on the supermarket shelves.
Glazed Berry Pie
One baked pie shell
1 Quart Blueberries < or mix red and black raspberries and strawberries>
3/4 cup sugar
2 1/2 TBSPS Cornstarch
1/4 TSP Salt
1 Cup Water
Combine and cook until thickened over low heat <10 to 15 minutes> sugar, water, cornstarch and salt.
Puree 1 cup of fruit in blender.
Add pureed fruit to saucepan and stir to mix.
Let sit to cool about 15 minutes.
Stir in the remaining 3 cups of fresh berries <if you use strawberries, hull and quarter those>.
Pour into pie shell and chill in the refrigerator for 4 hours.
Serve with whipped cream.
