    Chocolate Pecan Pie


    2 squares Baker’s Unsweetened Chocolate
    3 tablespoons butter 3 eggs, slightly beaten
    3/4 cup sugar 1 cup dark corn syrup 1 teaspoon vanilla extract 1 cup coarsely chopped pecans 1 unbaked 9-inch pie shell, homemade or frozen
    (do not prick holes in this pie crust)

    Preheat oven to 375 degrees.
    Melt chocolate and margarine. Let cool slightly.

    Combine sugar and corn syrup in saucepan. Bring to boil over high heat, stirring until sugar is dissolved. Reduce heat and boil gently for 2 minutes, stirring occasionally. Remove from heat; add chocolate mixture. Pour slowly over eggs, stirring constantly. Stir in vanilla and nuts.
    Set pie shell on heavy-duty baking sheet and pour in filling. Bake 40 to 45 minutes, until filling is completely puffed across top. A knife inserted midway between center and rim should come out clean. Cool pie on wire rack to room temperature before cutting.

      Baker's Chocolate is unsweetened dark chocolate. It comes in "squares" and each square is one ounce. It is packed eight squares to a package. It is very common here to refer to it as "X-many squares" instead of ounces. That makes the person sure to use the right chocolate. This chocolate is not semi-sweet, it is actually very bitter to the taste, but is used a lot for baking or candy making.

                      I make my pecan pie "Cajun style." The real trick to cajun cooking is that they usually brown the ingredients before they add them to the recipe. This is an incredibly easy recipe. I suspect that it would be just as good if you mixed in 2 oz. of Baker's chocolate, but even without chocolate, it is wonderful as about the best Pecan Pie I've ever made. And so easy:

                      Brown 1 stick (1/4 pound) butter. Add to 1 cup dark corn syrup, 1 cup dark brown sugar, 3 eggs, 2 teaspoons vanilla, 1 teaspoon of fresh lemon juice, 1/2 teaspoon salt, and mix well with a fork. Stir in about 1 cup whole or halved pecans. You can also add about 1/4 cup pecan pieces in additon to the halved pecans, if you want.

                      If adding the chocolate, I would use either pre-melted baker's chocolate, or else melt the chocolate in the top of a double boiler with about 3 tablespoons of the butter (and brown the rest as in the original recipe). Then mix in before you add the pecans.

                      Pour it all into an unbaked pie shell, and bake at 350 degrees for 50-60 minutes. Let cool and enjoy.
