Banana-Nut Bread
In the order listed.
Blend together 2 cups flour, a dash of salt, 1-tsp baking powder and ½ tsp baking soda
Mash 3 ripe bananas on a plate with a fork then cut them into above mixture. This will be thick. The idea is to coat the entire banana.
Cut in 1-cup sugar. (Do not put the sugar with the other dry ingredients before the banana is thoroughly cut in.)
Beat together: 2 whipped eggs, ½ cup melted (not hot) butter, 2 TBS milk, 1 tsp vanilla and then completely fold into the above mixture. Do not leave this wetness separated. Stir it in completely.
Fold in 1 cup coarsely chopped walnuts, spreading them throughout the batter.
Pour batter into Greased and lightly floured Pyrex loaf-dish (pan).
Bake 1 hour-10 minutes at 350.
Serve while slightly warm, but let it cool somewhat before slicing otherwise it may fall apart.
