    FRESH CRANBERRY ORANGE RELISH

    Goes with turkey meals and strange as it may sound, it goes great with pumpkin pie.

    Prepare seeded fruit for processing. Do not remove the peel.
    3 navel orange, unpeeled, cut into eighths
    5 large firm Fuji apples, cored and cut into large chunks
    2 lemons, unpeeled, cut into quarters

    24 ounces fresh cranberries. That’s two 12 OZ bags

    Pulse grind until coarsely chopped. Blend together in very large bowl.

    Stir in:
    4 cups sugar
    1/8 tsp salt
    ¾ cup pecans, toasted and coarsely chopped


    Makes about 3 quarts.
    Transfer to storage bowls, cover, and refrigerate for at least 2 hours and up to 2 days.


    I make this before Thanksgiving, keeping half in the fridge and freeze the rest for Christmas. You may wish to halve the recipe, this close to Christmas.
