  • What do you think of ham tetrazini?

    The Cooks hams were on sale and I made one the other day for supper. I usually only make them 3 times a year because you can't get less than 10 pounds, there are only 3 of us and we get hammed out.

    I cut up some and put it in the freezer for omelettes already and of course we've had sandwiches but was wondering if there was a way to get one more hot dinner out of it.

    Could I use it in place of turkey/chicken in tetrazini? Or is that too wierd taste-wise?

    Any other ideas?

    UGH no pea soup recipes please. That is probably the only soup I won't make or eat.

    How about making hash? How about a pot of black eyed peas (crowder peas) for New Year's? I put ham or smoked sausage in my red beans and rice, too.

      It's such a strong flavor...I don't think it would work in tetrazini very well. The ham and tomato sauce combo isn't happening for me.

      How about a croque monsieur or some other kind of hot ham sandwich?

        Fern's right, you could use the ham to flavor pretty much any kind of beans.

          Or you could make pasta and then toss it with little pieces of ham, steamed vegetables, and grated cheese. Or make fettucine alfredo with little pieces of ham in the sauce. There's a name for that, I just can't remember what it's called.

            Instead of omlette, how about a dinner fritatta (serve it with a salad, and perhaps some rolls or potatoes)? Make a big one, with ham, cheese, and some veggies. Its a matter of personal taste, but we usually serve salsa with ours. We generally make them big, cause I'll eat it cold the next day, for breakfast now, but I used to take it for lunch when I was working (yum!). I had some of the most desired "share" lunches around (red beans and rice, fritatta, stews, gumbo, jambalaya, etc).

            That just reminded me, I usually use chicken and ham in my jambalaya, too! And if you don't want to fuss, and can find Luzianne brand mix, it is pretty painless.

              all excellent ideas. I will always eat breakfast no matter what time of the day it is.

              I'm really loving the jambalaya idea.

              Wacky my tetrazzini is not tomato based but a cream veloute and so similar to alfredo.

                Oh, much better.

                I went and looked it up and I was definitely wrong, tetrazzini is not tomato based. Whoops, my bad. Don't know what I was thinking of.

                Still seems like it would be better as small pieces over pasta with the cream-based sauce rather than a slice of ham with the cream sauce. Is there pasta involved in tetrazzini?

                  well julienned ham I was thinking, and yes I usually use egg noodles throw in some veggies which I'll eat and they will pick out..

                  I will come up with the dish you are thinking of. Chicken, tomatoes,caciatore?

                    Maybe one of these....

                    Macaroni and Ham Casserole

                    1 1/4 cups uncooked elbow macaroni
                    2 tablespoons butter
                    1/4 cup finely chopped onion
                    4 ounces mushrooms, sliced
                    2 tablespoons chopped green bell pepper (about half of a small bell pepper)
                    2 tablespoons chopped pimiento-stuffed olives
                    4 ounces (1 cup) shredded sharp Cheddar cheese
                    1 cup sour cream
                    1 teaspoon seasoned salt
                    1 teaspoon pepper
                    1 1/2 cups diced cooked ham
                    1/4 cup milk
                    1/2 cup soft bread crumbs, tossed with a few teaspoons melted butter
                    Cook and drain macaroni, following package directions; place in a large mixing bowl. In a large skillet, melt butter over medium low heat. Add chopped onion, mushrooms, and chopped green bell pepper. Cook, stirring frequently, for 3 to 4 minutes, or until onion is softened and mushrooms are browned. Add skillet mixture to macaroni with chopped olives, shredded cheese, sour cream, salt and pepper, ham, and milk; stir gently to mix thoroughly. Transfer to a shallow 1 1/2-quart baking dish. Sprinkle buttered bread crumbs over the top of macaroni and ham casserole; bake at 350° for 25 to 35 minutes, or until ham casserole is bubbly and breadcrumbs are lightly browned.
                    Macaroni ham casserole serves 6.

                    PS....You don't have to put all that extra stuff in this recipe. You can just make the basic macaroni & cheese, with the ham.


                    Ham and Fettuccine in Cream Sauce

                    3/4 cup grated Romano cheese
                    1/4 cup Parmesan cheese
                    2 cups leftover cooked ham, diced
                    8 ounces fettuccine noodles, broken in half, cooked and drained
                    White sauce:
                    3 tablespoons butter, melted
                    3 tablespoons flour
                    2 cups milk (1 or 2 percent)
                    1 teaspoon salt
                    Pepper to taste
                    Topping:
                    1/4 cup bread crumbs
                    1 tablespoon butter, melted
                    1 tablespoon Parmesan cheese
                    1 tablespoon dry parsley


                    Combine ingredients for white sauce. Add cheeses and ham.

                    Pour over cooked fettuccine noodles in a buttered baking dish (we used a 2-quart casserole dish) and mix well.

                    Top with bread crumb mixture.

                    Bake at 350 degrees covered for 25 minutes. Remove cover and bake an
                    additional 10 to 15 minutes.


                    Of course you can always make ham & grilled cheese sandwiches. I make them sometimes when I have left over ham.....Just slice the ham thinly, and put it in between the cheese. Yummy!

                      Egg noodles--maybe a bit rich for this? With the ham and the cream and the cheese?

                      I just looked up cacciatore and it's "hunter style" with tomatoes, mushrooms, onions. Wikipedia says it's braised. I was just thinking of a slice of ham with tomato sauce and cheese, cooked as a casserole. I guess that's close to parmigiano? P.S. It sounds like a bad idea with ham.

                        Oh it's cold and windy and a nice fattening meal sounds right up my alley today. The veloute is not very heavy and I just sprinkle grated romano cheese. It was the ham I was having an issue with using, but I think it will work. and it may get an "it's different" which means it never gets made again

                        I can blame Fern for the paella I have to make tomorrow as she brought up jambalaya.

                        and then I have got to go back to a normal menu or I'll gain 5 pounds by the end of the month. Can't have that.
