Looking for "tried and true" lemon meringue pie recipe

      How about using a graham cracker crust instead? That would work well for you and it isn't frozen. You buy them in the baking aisle (usually found on the lowest shelf, towards the end for some reason).

        I wouldn't think it would matter...
        I think Pillsbury does one that is in the refrigerator section that you use your own pie plate but have never used it as I don't have a pie plate and have been satisfied with results from the Pet Ritz shells.

          That would be easy, and I did see those, but my previous post (quoted above) ruled that out... I'm guessing the crumb crust will be too porous.

            I buy the pillsbury when I don't make my own. It's very flaky.

              Ok, they have these things called "pie crust sticks," that I think you just have to mix (with a fork) the dry stuff and the shortening together with a fork. It is all in one box. I haven't used one for years, but I think they still make them.

              I don't know about graham cracker crust being to porous though. Cheesecake doesn't seep through it, does it?

                So we finally got around to making the pie. Jericap, the pudding/pie filling idea was a godsend. I was making it with my favorite 3 year olds because they are really into Amelia Bedelia, who bakes a lemon meringue pie in the first book in the series.... So simple was key, and the twins got to do a lot of the pouring/mixing and helping me hold the mixer while they spooned little bits of sugar into the meringue...

                We made some whipped cream as a back-up when I realized the pie had to chill overnight, so the kids would have something to taste right away (boy do they love whipped cream now ), and in case they didn't like the meringue topping. And I found the frozen pie crust, which took some doing but I baked it before we got started. It was delicious! I'm glad I didn't have to use the other kind.

                I probably should have beaten the meringue a bit longer, but I'd never done it before so wasn't sure when it was done. But it baked a lovely light brown, and had a few peaks, it was just denser than it likely should've been and not as stiff, but it tasted great.

                We've got an extra crust and box of filling mix, so we'll probably try again at some point and see if we can improve on the meringue...

                I am now carefully screening the Amelia Bedelia books... but they had "Amelia Bedelia and the Baby" yesterday

                  Hey, I met Mr. Amelia Bedelia at a party once. The son of the original author. I think she was Peggy Parrish and he's Herman Parrish?

                      works well for toddlers though. Dr Suess was about as baby as I could deal with.

                            I'm glad it worked out for you. Both my daughter and my son used to help me cook/bake when they were small. We used to have so much fun..

                            For Christmas, I'm putting together a cookbook for each of them of the "special" family recipes. You know the recipes you only make a certain times of the year, or the cookies you make at Christmastime. Recipes I've made with/for them since they were little; the ones they ask for..

                              And as luck would have it, the frozen crusts came in a package of two, we still have one left and the expiry date is 12/15/08...

                              Wacky, I have since hidden all the Amelia Bedelia books written by Herman Parrish (Peggy Parrish's son) - they are considerably more annoying than hers...
