    Howe's Famous Peanut Brittle Recipe
    1 cup light corn syrup
    1 tablespoon butter
    1 cup sugar
    3/4 teaspoon salt
    1 cup raw peanuts
    1 teaspoon baking soda

    Combine corn syrup, butter, sugar and salt and cook over medium heat until sugar dissolves. Add raw peanuts. Increase heat to high and stir constantly until peanuts become light brown. Remove from heat. Quickly stir in baking soda. Spread thinly on greased shallow pan. Let stand until cold and hard

    I make this every year at Christmas time..it comes out great. This year I'm thinking of coating some of it in chocolate...yumm!!

      Microwave Cashew Brittle (Peanuts work too)

      1 can (9.5 oz. Or 2 Cups) roasted, salted cashew halves
      1 Cup granulated sugar
      ½ Cup light corn syrup
      1 tsp butter
      1 tsp vanilla
      1 tsp baking soda

      In a 2 quart microwave bowl, stir together nuts, sugar and corn syrup.
      Microwave, uncovered, at high, until the mixture is a light brown, about 6 to 8 minutes, stirring halfway through.
      Meanwhile, grease a cookie sheet well with butter and set aside.
      Using oven mitts, remove the mixture from the oven. (It will be VERY hot)
      Stir in the butter and vanilla.
      Continue to microwave, at high, 1 ½ to 2 more minutes.
      The mixture should be caramel colored.
      Use the oven mitts to remove the mixture from the microwave.
      Add the baking soda.
      Stir quickly until light and foamy and the baking soda is well mixed in.
      Immediately (and very carefully) pour onto the cooking sheet.
      Use the back of a spoon to spread out as quickly as possible.
      (The brittle will be fairly thick)
      Let the brittle stand until completely cooled, about 30 minutes.
      Break into pieces and serve.

          I never realized how much I liked peanut brittle until I started making it. Well...maybe I just like the one I make..
          I already bought my peanuts, I'm going to make it this week..can't wait
