We have a traditional pie and cake that I bake every year for both T'giving and Christmas. The cake is a rocky road fudge cake and the pie pumpkin praline, I also do a chocolate pecan pie ocassionally that get rave reviews, but I don't eat it.

If anyone wants the receipt pm me and I will scan them to you.

I just make the same pies every year for Thanksgiving. Apple or dutch Apple, Pumpkin Pie and Coconut Custard pie. This year I'm adding Blueberry Crumb from a special request. Then they always want Ice Box cake, which isn't a cake at all, but pudding and graham crackers

        Ang,
I'd love to make the pumpkin roll cake but I never made a jelly roll or any rolled cake. If I get a chance to bake one this week to practice , I will. Knowing me, if I wait until T'day, it will flop and I'll be out a dessert,

We go to son #3's and I always bring the dessert because DIL doesn't bake. She actually orders all the food precooked and picks it up. [I] was never smart enough to do that. I always made everything myself.

Does anyone have a good, plain, rich yellow cake recipe? And how about frosting recipes?

I want to make cupcakes. I've had cupcakes from some really fancy NYC places and I decided they're all about a rich, buttery-tasting base with an adorable, yummy frosting topping. I have a good buttercream recipe, but I'm always open to new recipes.

I did the pre order one time when we went to my Mother's house. It worked out really well. We didn't mess her kitchen, just pop the food in the oven and a little while later, sit down and eat.

I can't do pie, actually not good at baking deserts in general. If we have pie, it is usually something frozen out of a box that gets heated after the turkey comes out.

One thing I do w/ pumpkin pie is after you pre-bake the crust, spread a thin layer of good apricot preserves in the shell, then add the pumpkin filling and bake. The apricot just adds a slight tart twist and really compliments the pumpkin. I think I originally saw this in a Bon Appetit magazine.

That's a good tip! Sounds like a great combo.

I'm going to my brother's for T'Giving, and am in charge of the pies. So, I figured that I'd get some from Briermere Farms, and I'd like to bake a couple, as well.

I'm not really a baker so I'm looking on web for recipes, but although some look good, I can't be sure. Does anyone have a recipe for a good Coconut Custard, or Chocolate Cream Pie?

I'll get the others from Briermere Farms.

                    Ang,
I have a recipe that's pretty easy, I've had this recipe as long as I've been baking pies

                    Coconut Custard Pie
                    4 Slightly beaten eggs
                    ½ cup Sugar
                    ¼ tsp Salt
                    ½-1 tsp. Vanilla
                    2 ½ cups Scalded milk
1 9” unbaked pie crust, if frozen, thawed
4 oz Coconut ( I usually don't measure this, but just judge it, sometimes more, sometimes less, Usually more!)

                    Directions:
                    Preheat oven to 350 degrees
In a large bowl, mix together the eggs, sugar, salt, vanilla.
Slowly add the scalded milk, I add a continual little stream of milk into the egg mixture and then once mixed, just pour the rest in the mixture.
Pour combined mixture into the pie crust
                    Add coconut*

Tips: To scald milk- place milk in a saucepan, watch milk until tiny bubbles form around edge and has a film on it when you put your finger in it. This only takes about 5 minutes on med high.
*After you have put the pie on the rack, add the coconut, then push the rack and pie into the oven to bake
Bake for 45 minutes or until toothpick comes out clean

Thanks, that sounds great. I feel better making a pie that I know someone has already had success with. I'll let you know how it turns out.

I usually bake the pumpkin pie that is on the Libby pumpkin label. Always no fail.(or maybe it's the pumpkin pie filling). Just check the 2 labels for the recipe.

I do the same with the Pumpkin Pie, I just adjust the spices a little.

                              Really rich Chocolate Pie

                              Pre baked pie shell

                              In double boiler melt:

6 Hershey with almonds bars (Individual ones)
                              18 Marshmallows
                              1/2 cup milk
                              dash salt.

                              When melted, let cool

Beat one cup heavy whipping cream until stiff.

Fold the chocolate & Whipped cream together.

pour into pie shell and chill.

                              Top with sweetened whipped cream
