  • need recipe for dish to pass

    I am invited to three dish to pass functions this week.
    I also need to empty my refrigerator and freezer when we leave shortly for Wisconsin.

    I have lots of ground beef. I would like a recipe with ground beef. I have a two pound container of ricotta cheese I would like to use. I have lots of rice, pasta in different shapes, etc. I am trying not to buy anything I don't have on the shelf. Lots of pasta sauce, canned soup, stuff like that. I remember a dish with ground beef and ricotta and a tomato type sauce, nbut can't remember it. Also something with ground beef and rice.
    I need something that won't take long to make, as i have to come home from one funtion and then leave quickly with my dish for the pot lucks.

    Easy Jungle Stew

    Mom used to make this all the time , I don't know why it's called a stew, cause it isn't runny

    1 small box of any kind of pasta you have on hand.
    1 lb of ground beef cooked
    green pepper and onion (as much as you like)
    1 can of tomato soup

    Mix altogether and throw in 350 oven for 1 hr. I cover it for 1/2 hr and uncover for last half hour.

    I have also added cubed cream cheese or reg cheese for a creamier texture. I also don't see why you can't layer this receipe with ricotta cheese (sort of a hamburger/pasta lasagna but w/o the lasagne noodles. Can easily be doubled.

    Another version , I made this tonight
    I had left over spaghetti sauce so put a thin layer of sauce in a 9/13 dish.
    Add pasta , then add a layer of cheese or a layer of ricatta , repeat.

    Both are yummy!!

      I don't know what to call this, but very similar to Baked Ziti

      Brown the ground beef, add some spices...garlic, some S&P, oregano....let cool a little.
      Mix this in with your ricotta and add an egg (1 per pound of ricotta), some grated cheese, maybe 1/4 cup of it.
      In the meantime, boil macaroni...anything but spaghetti.
      When that is done, mix with some pasta sauce.
      Then layer everything. So you would put in about 1/3 of your pasta...then spoon some ricotta mixture, then add some more sauce. This should end with the sauce layer.
      If you have some mozzarella, throw some of that in also. It doesn't matter where, it works everywhere.

        I will share a my Mom's Sicilian Broccoli and Ricotta Pasta dish.

        First start out by sautéing an onion chopped small. Cook a bag of chopped Broccoli and then add it to the onions set aside. Cook your pasta Elbows work good or some pasta that is like that. Add Salt to pasta in the water. When the pasta is done remove 3/4 of the water leaving the rest of the water with the pasta. Now mix in 2 lbs of Ricotta the Broccoli and onions. Add plenty of pepper and grated Cheese. Mix it all in the pot and your done. Now if you like it like a soup you can leave more of the water , If you like it dry add less of the water.


        With the beef just make a meat loaf.

          these are all good, thank you - and not way too many ingredients (as I don't want to buy anthing else, I want to use up)
          One dish is for the Bocce Federation, 288 people invited to a pot luck - how is that supposed to work!!!!!

          One is for a golf group after golf. and we may have a cul de sac gettogether too.

            Big Frank - you don't need to add an egg to the ricotta for this recipe?


            Jericap - I assume you bake at 350 for 45 minutes to an hour?

            I got a late tee time today, won't get home til about 3:30 and have to have the dish ready to be there at 4:30.
