  • Pizza ideas?

We make home made pizzas once or twice a week; looking for your different/unique topping combinations. Just made this one tonight:

    Thin pizza crust
    Sun-dried tomato pesto sauce base
    Ground italian sausage-cooked up ahead
    Baby spinach leaves
    Fresh basil
    Portabello mushrooms
    Sliced tomatos
    Colby/Jack cheese(it was handy)
    Salt/pepper/garlic

    It was yummy!

No Mozzarella Onion with Bread Crumbs

Ricotta but do not over do it by adding to much. Mix the Ricotta with Both fresh and powdered garlic as well as Mozzarella and grated Cheese.

We don't make pizza at home, but one of our favorite pizza places is California Pizza Kitchen. Check out some of their recipes to give you some ideas. link

Their Pear & Gorgonzola Pizza is loved by our family.

Anyone care to share their pizza dough recipe? We've made pizza at home a few times, and the dough has always been ok, but never great. I'd make pizza at home a lot more if I could ever get the dough right.

I use my bread machine to make it and try to make the biggest dough with it,

We buy frozen thin crust pizza bottoms in bulk; makes life easier.

Frank-did you have two recipes listed or one? Where do the bread crumbs fit in? I never thought of ricotta, will definately try that.

            Pear and gorgonzola sounds great.

Another one we tried and found very good was:

            Hummus spread on crust
Already grilled slices of zucchini, onion and mushrooms
            Parmesan
            Mozzarella

            Any Greek style recipes?

Hmmm, I always considered the thrill of cranking out a homemede pizza to be in nailing the perfect crust. I'll have to see what's available in the frozen dough section next time I'm at the store.

This is crust for 2 - 14" pizzas. BTW, I've never gotten the crust right.

                  7 cups flour
a little over 2 cups warm water
                  4 tablespoons honey
                  2 teaspoons salt
3 teaspoons yeast (I use the jar, not the packets. Also, this is variable, more yeast makes a thicker crust.)
3 tablespoons Olive Oil, your choice as to virgin, cold pressed, etc.

flour and salt go into a large bowl and I mix them a bit using a hand held mixer.

water and honey go into a suitable bowl and I stir them with a wooden spoon. yeast goes into this and I usually let the yeast start to proof before stirring with the spoon, and then let it proof.

at this time I add the olive oil to the flour/salt and also oil the sides of the bowls the dough will rise in.

when the water/honey/yeast is ready, I add it to the flour/salt/olive oil and use the hand mixer until it is obviously time to switch to hand kneading.

when possible, I divide the dough into two, fairly equal size "balls" and continue kneading.

then, I put the dough into the two bowls, cover with a wet cloth, and keep in a warm place to rise.

every couple of hours I check the dough and knead it some more.

the dough spreads fairly well on my pizza stones, but sometimes I need the assistance of another family member. also, I bought a heavy, marble rolling pin to help get the dough to roll out.

If I think of anything more, I'll edit the post.
