          The park Shaggy was referring to is the Holy Land Experience.
          They put up the Christmas lights this time of year and have alot of Christmas shows.
          If you are into Christian history, this is a great place to visit, especially the tabernacle show & the scriptorium with the Gutenburg press, upper room experience & bibles of the martyrs.

          The Gaylord Palms does the ICE show this time of year.
          There are also several free shows in the atrium with some nice restaurants.
          The parking is around $12 for self parking or $20 for valet.

          You can visit alot of the Disney resort and get a bit of a Disney experience without visiting the parks.
          Some of the restaurants have some nice themes and shows.
          Some of my favorites are:

          Sanaa at Kidani Lodge in Animal Kindgom Resort.
          They have a culinary tour at 3pm everyday where they let you sample some of the exotic sauces they use in the foods with a free bread service. Your table will have a view of the savannah too, you can then of course hang out in the resort by the fire pit and listen to some of the African employees share about their homeland.

          If you like Rodizio style meals with a polynesian flair then I recommend visiting Ohana in the Polynesian resort.http://disneyworld.disney.go.com/dining/ohanas/

          California Grill. Try to go around 8pm so you can see the Wishes fireworks at 9.
          Make sure they are doing fireworks that day.
          It's a little pricey but worth doing at least once IMO.

          If you don't want to spend the money on Cali Grill you can go out on the balcony under the monorail around 9pm and watch the fireworks from there for free or eat at Ohana and hop the monorail for free.

          Also visiting the boardwalk at Disney is free.
          There are a few nice restaurants and always some sort of entertainment going on.

          There is a piano bar with dueling pianos on the boardwalk called Jelly Rolls.

          I think the cover charge is about $10 for Jellyrolls for a free option try the Port Orleans resort
          at the River Roost.

          Also love that Golden Corral on 535. Probably the best one I have ever been to.
          The food is always fresh because of all the traffic.

          I never miss visiting Cracker Barrel in front of the big Orange by the Wyndham Cypress Palms.

          If you want a day trip visit Mount Dora. It's a quaint little town on a lake.

          Wycliff museum is interesting and on a nice campus. They also have a little cafeteria that was pretty decent.

          Also second the Celebration city recommendation. It's a town built by the imagineers of Disney.

          You could also do a day trip if you are into Frank Lloyd Wright museums to the University that he designed in Lakeland.
          They do a free or donation tour.

          Venture a little further south to Lake Wales and visit the artist colony in Chalet Suzanne which is a historic Inn.
