"Bold, fresh, and delicious are the watchwords for our 2004 Kunde Estate Cabernet Sauvignon. It's deep ruby color immediately tells you this is one to take seriously. Black cherry scents are followed by rich, mouth-filling flavors of blackberries and dark chocolate, with just a touch of chalky tannins at the end to tell you it's still a youngster. This wine will be at home with the classic complements to Cabernet: grilled steak and prime rib, but will also readily take to pasta with tomato-based sauces. Dinner just got better!"

Tim Bell, Winemaker
Aroma/Flavor Profile: Blackberry, dark chocolate, and a hint of cinnamon.
Harvest/Winemaking:
* Crafted from a blend of 87% Cabernet Sauvignon, 12% Syrah, and 1% Malbec
* Harvest began on September 9 and finished October 4 from multiple vineyard blocks at an average Brix of 25.8°.
* We began harvest earlier in 2004 than any on record due to both a small crop and extended hot spells in early September. The resulting wines show good concentration, big up-front fruit flavors, and moderate tannins.
* Syrah and Malbec were blended with the Cabernet to create a deeper colored, fuller bodied, richer flavored wine.
* Aged for 17 months in small French and American oak cooperage, 40% new.
Food Pairing: Grilled New York strip steaks.Timeshareforums Shirts and Mugs on sale now! http://www.cafepress.com/ts4ms
