What is the best way to pay for things in Cancun and surrounding areas?

Cash- sometimes pesos sometimes dollars. Use credit cards sparingly and with care- leave the American Express and Discover card home.

Cash is king. For hotels, some restaurants, can use credit cards, but be careful. My only erroneous charge likely came from someone who probably got my number from a charge I did in Mexico.

I recommend taking some dollars with you, but primarily getting pesos from local ATMs. Check with your bank before you leave to be sure they won't hit you with additional ATM charges for taking out money in non-U.S. currency. This can also be a problem with credit cards so check with them if you're planning on using credit cards while abroad. If these things make you uncomfortable, you can get pesos before leaving the states. Check with your bank for this, but typically the exchange rates are worst with this route.

I use a credit card for established restaurants and the malls in the hotel zone and paying off the bill at the Royals. You get the best rate with credit cards but some do charge a foreign fee, 3% for Citibank, but I get frequent flyer miles. Downtown area is dollars or pesos.

If the exchange rate from dollars to pesos stays as it is now...pesos would be your best bang for the money....
